Split Pea & Caper Humous
Split peas are an easy substitute from the traditional chick pea humous recipes as they don’t require pre-soaking before cooking and have a creamy consistentcy when blended. They are sweeter than chick peas, lentils and yellow split peas and are a good source of low fat protein and fibre.
INGREDIENTS
400g Dried Green Split Peas
1 lemon Juiced
3 tsp Capers
2 Garlic Cloves
3 tbsp Omega 3 Oil (Or Extra Virgin Olive Oil)
1 heaped tbsp Tahini Paste
2 pinch of mixed herbs
Pinch of Salt & Pepper to take
PREPARATION
Cook the split peas in unsalted water for 20mins until soft and rinse in cold water. Then place into a blender or Vitamix and add all other ingredients into the blender. I like the consistency to be a little chunky and wholesome, and then top with a blend of toasted sunflower, dark flaxseeds and splash of Omega 3 Oil or Olive oil.
Tastes great laden on top of sesame rice cakes, with a few slices of avocado and a dollop of Loquat, Apple and Ginger Chutney
