Beetroot & Millet Porridge
In Ayurveda autumn cleansing helps to release built up grief or disappointments in the lungs from the previous season and expel any toxins, heavy metals or excess through the large intestine that the body no longer needs.
Eating warm foods, such as porridge is grounding during the months of Vata, when the air element is dominant. Beetroot porridge soothes with it’s sweet earthy taste, whilst it has many health benefits to cleanse the blood, strengthen the liver and acts as a mild diuretic.
INGREDIENTS
Serves Two
Half a large beetroot
1 cup of Millet flakes
0.5 Tsp Ground Cardamon
1 Tsp Grated fresh ginger
1 Tsp Tahini
2 cups of water
1/4 Tsp salt
2 Tbsp Coconut oil
Pepper to taste.
2 cups of Oat Milk
Preparation
Finely grate the beetroot and add to a pan with spices and coconut oil and gently fry for 5-10 minutes until soft.
Then add Millet, Tahini, salt and liquids. Stir on a medium heat for 5 - 10 minutes, with a sloppy texture.
Serve in a bowl with a drizzle of maple syrup or teaspoon of muscavado sugar on top and a little extra oat milk to float around the edges.
